Sweet & Sour Pork Meatballs with Veggies














Ingredients:

500g pork mince
1 T fresh ginger, peeled and grated
2 garlic clove, crushed and mince
1 apple, peeled and grated
1c carrot, sliced
1c sweet peas
1c yellow beans
1 onion
2T parsley, choped
3T vinegar
2T sugar
1T salt
1t ground pepper
2T corn flour
1/4c water
1/2c oil for frying

How to cook:

1. Make meatballs by mixing the pork mince, ginger, garlic, grated apple and parsley mix together and shaping into about 20 small meatballs.
2. Heat a dash of oil in a non-stick frying pan and add meatballs and cook on a medium heat until browned and cooked through. Remove from pan and drain on a paper towel. set aside.
3. Mix corn flour to a 2T of water for thickening. set aside
4. Heat oil in a shallow pan, sauté garlic, onions until cooked. Add carrots, sweet peas, yellow beans, stirring occasionally. Add water, sugar, vinegar. salt and pepper to taste then bring to boil. Add corn flour mixture. Add meatballs and cooked for about 1-2mins. then serve on a steam rice.
