Chicken Teriyaki Sushi





After our long and exciting train joy ride from wellington to paraparaumu. We thought of having a japanese cuisine for dinner last 13-July.
Ingredients:
  • 4 cups sushi rice (follow direction in cooking the rice. you can found this in the back of nori sheet)
  • teriyaki chicken (ingredients and preparation below)
  • cucumber sliced

Sushi Preparation:

Put a nori sheet on top of a bamboo mat (makisu). Spread sushi rice on top of the nori sheet. Place the chickent chunks and cucumber lengthwise on the rice. Put a little bit of teriyaki sauce on top of the chicken. Roll up the bamboo mat, pressing forward to shape the sushi into a cylinder. Press the bamboo mat firmly and remove it from the sushi. Cut the rolled sushi into bite-sized pieces.

Ingredients for Teriyaki:
1/4 lbs chicken breasts
1 T sake (rice wine)
2 T soy sauce
2 T mirin (sweet rice wine)
1 T sugar
1 T grated ginger

How to cook:

Poke chicken using a fork. Mix other ingredients in a bowl. Marinate the chicken in the mixture for 15 minutes in the refrigerator. Heat some vegetable oil in a frying pan. First, fry the skin side of the chicken on medium heat until the skin is browned. Turn the chicken over to fry the other side on low heat. Pour the sauce used to marinate chicken in the pan. Cover the pan and steam cook the chicken on low heat until done. Remove the lid and simmer until the sauce becomes thick. Stop the heat. Slice the chicken and set aside.
